Rum Truffles

INGREDIENTS (For 12):
3 oz. plain chocolate
1 egg yolk
½ oz. butter
1 teaspoon rum
1 teaspoon single cream (coffee cream)
2 oz. chocolate vermicelli(sprinkles) or drinking chocolate (powder)
Melt the chocolate in a small bowl over a pan of hot water.
Add the egg yolk, butter, rum, and milk.
Beat the mixture until thick, then chill in the refrigerator until firm enough to handle.
Shape the mixture into 12 balls and toss at once in vermicelli or drinking chocolate.
