A Place to Find the Perfect Meal
Roasted Root Vegetables
2 med potatoes, cut into 1 1/2 inch chunks
1 sweet potato, peeled, cut in half and sliced.
1 1/2 C baby carrots
1 med red onion, cut into wedges
2Tbsp olive oil
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp salt
1/2 tsp cumin (optional)
1/4 tsp pepper
Coat roasting pan with non stick cooking spray. Toss vegetables with oil and seasoning.
Spread in roasting pan
Bake at 350Deg for 40-45min
