Pumpkin Cheesecake
Graham Cracker crumb crust ( made using directions on box, or use storebought crust)
3 pkg cream cheese
1 cup sugar
1 tsp vanilla
3 eggs
1 cup canned (or cooked, pureed) pumpkin
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp allspice
In mixing bowl, beat cream cheese, sugar and vanilla until smooth. Add eggs, pumpkin and spices; beat until just combined. Pour into crust. Bake at 350 degrees for 1 hour. Cool on wire rack for 1 hour. Then refrigerate until completely cooled. Makes 12 servings.
