Mustard Relish

8-10 large cucumbers, seeds and peel removed
2 red peppers, cut and seeded
2 lbs. onion, cut in quarters
1 cup cauliflower, broke up in small pieces

Grate cucumbers, red peppers and onions. Let sit in a bowl and add 1/2 cup of salt to mixture. Let set a hour.

4 cups white vinegar
5 cups sugar
2/3 cup flour
1/4 cup dry mustard
2 tsp celery seed
2 tsp. mustard seed
1 Tbsp. turmeric
Mix these ingredients together and heat in a large pot on medium heat. Once heated through add the vegetable mixture. Add the small pieces of cauliflower. Stir constantly 10-15 minutes or until the mixture looks shiny.
Bottle mixture right away.
