Maple Sugar Candy

2 cups maple syrup

1/4 tsp of milk, cream or butter

 

Hat over medium heat to a temperatur of 242deg F. (about 10 min)

Remove from heat and let the bubbling settle for 1 minute.

 

Stir the hot, thickened syrup with a wooden spoon until it just begins to turn grainy or you begin to see granules forming (about 1/2 min)

 

Work quickly and pour the syrup into molds and let harden , about 10-30 minutes.

Pop out of molds and store in an airtight container.
