Maple Cake and Icing

1/2 cup margarine
2 eggs
2 1/4 cup flour
3/4 tsp baking soda
1/2 tsp salt
1/4 cup white sugar
1 cup maple syrup
1 Tbsp baking powder
1/4 tsp ginger
1/2 cup hot water
Mix well. Pour into a 9 x 13 pan. Bake at 350 for 35 - 40 min. Cool completely.

Icing:
2 egg whites
3/4 cup sugar
1/2 cup maple syrup
1/4 tsp salt
1 tsp vanilla
1/4 tsp cream of tartar
Mix well and cook in a double boiler with a mixer until icing forms peaks. Approx. 7 min. Spread over cooled cake
