Divinity Fudge

*** Do not try to make this fudge on a wet or humid day ***

 

2 2/3 cups white sugar

2/3 cup light corn syrup

1/2 cup water

2 egg whites

1 tsp vanilla

 

 Cook sugar, corn syrup and water togeter in a saucepan over low heat.  Stir constantly until the sugar is fully dissolved and then stop stirring

Cook until the temperature reads 265 degrees F on candy thermometer.

 

In separate bowl, beat 2 egg whites util stiff peaks form.

 

Continue beating while adding sugar syrup in a thin stream to the egg whites.

Add in vanilla

Beat at least 8-10 minutes. Pout into p and let sit at room temperature until set.  

Store in an airtight container.
