A Place to Find the Perfect Meal
Cinnamon Muffins
2 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup sugar
1/2 cup brown sugar
1 large egg
3 Tbsp. veg. oil
1 tsp. vanilla
3/4 cup buttermilk
Topping:
1/4 cup brown sugar
1/2 tsp cinnamon
Preheat over to 400. Spray muffin cups or line with papers. In med. bowl, whisk together flour, baking powder, baking soda, salt and cinnamon. In large bowl, whisk together sugars and egg until smooth. Beat in veg. oil and vanilla. Working in 2 or 3 additions, alternate adding flour and buttermilk to the sugar mixture. stirring until just combined. In a small bowl, stir together remaining brown sugar and cinnamon. Fill each muffin cup and sprinkle with topping mixture.
Bake at 400 for 15-18 minutes. Transfer to wire rack and cool.
Makes 12 muffins. You can also add fruit or nuts to muffins if you wish.
